Program Description
Cuisine and Culture Series Studying abroad provides an opportunity to experience cultures and countries in ways that exceed the scope of a traditional, classroom-based textbook and lecture format. Studying abroad challenges stereotypes with life-changing, career-enhancing experiences, endowing students with a global perspective and maturity that sets them apart from their classmates and future colleagues. Studying abroad is a critical component of a well-rounded education in the Hospitality and Tourism profession. To this end, we developed a study abroad program centered on the food and culture of Europe. This 3-credit program began in May 2002 with a two-week trip through Switzerland and France, where we visited culinary schools, toured wineries, and explored Swiss chocolate artistry among many other things. The success of this initial program led to subsequent programs exploring Italy, Denmark, Germany, Switzerland, Belgium, Luxembourg, the Netherlands and China. By now, over one hundred students and alums have experienced what has evolved to become the Cuisine and Culture educational tour program. The program begins with classes on the West Lafayette campus covering topics such as history, language, architecture, food and safe traveling. Over Spring Break, the class ventures abroad on an experiential tour of the region in question. Upon returning, students finish the course with reflective presentations and an exam. Site visits include: Round trip airfare from Chicago to Lisbon Shuttle bus to and from West Lafayette and Chicago All ground transportation while in Europe 4 night accommodations in Evora 3 night accommodations in Lisbon All breakfasts plus various lunches and dinners during class sessions Guided city tours of Lisbon, Evora & Sintra Olive oil production tour Winery tour and tasting Behind the scenes tour of the historic Hotel Convento de Sao Paul dating to 1182 Visit to Sesimbra and its daily fish auction Cooking class featuring regional dishes Port tasting at Solar do Vinho do Porto Cheese making in Azeitao Entrance to the 8th c.
